Hen Feet

Hen Feet are the lower leg-and-foot portions from mature hens and contain small bones, skin and connective tissue. The cut is distinct from a shorter hen paw because more of the metatarsal shank can remain attached. Prepared feet may be used in slow-cooked stock and specialty dishes where their gelatinous texture is valued. Removal of nails and the outer epidermal layer depends on whether processed or unprocessed feet are ordered.

Correct sorting distinguishes mature-hen feet from broiler feet and defines the point of separation at the hock. Buyers should specify toe and nail condition, skin removal, pad cleanliness and acceptable defects such as bruises, fractures and retained cuticle. Size and weight may vary with the bird class and require a separate grading arrangement.

Wholesale Handling

Frozen hen feet can be packed in food-contact inner bags within net-weight cartons. Protection from contamination, clean handling and separation from inedible material are necessary for any approved food-use lot. The producer's eligibility, documentation and carton configuration should be established before export.
