In trade, this description can refer either to an eviscerated whole hen or to a frame remaining after selected meat cuts have been removed, so the exact presentation is essential to a correct order. Where approved for edible use, suitable mature-hen carcasses and frames are used in stock, soup and flavor-concentrate production.

Quality Details

The specification must state whether breast, legs, wings, neck, skin and other muscles are present or removed, and define the remaining bone-to-meat composition. Inspection should cover full evisceration where relevant, cleanliness, undesirable attached organ tissue and bone damage. Whole dressed hens should not be labeled interchangeably with stripped carcass frames.

Wholesale Handling

Carcasses and frames are usually packed by net weight in strong, lined cartons that protect against projecting bone edges. Food-use status, processing category, traceability and the supplying establishment's approval are necessary commercial checks. A packing photograph or cut diagram is particularly useful for this product.
